Sweet, sour and spicy Gujarati-style toor dal with jaggery

Ingredients
- 1 cup toor dal
- 1 tbsp jaggery
- 1 tbsp tamarind paste
- 2 tomatoes, chopped
- 2 green chilies
- 1/2 tsp turmeric
- 1 tsp mustard seeds
- Curry leaves
- 2 tbsp ghee
- Pinch of hing
Method

Cook toor dal with turmeric until soft and mushy.

Add jaggery, tamarind paste, tomatoes and green chilies to the dal.

Simmer for 10 minutes, adjusting sweetness and sourness.

Heat ghee, add mustard seeds, curry leaves and hing for tempering.

Pour tempering over the dal and mix well.

Serve hot with steamed rice and a side of papad.
