Ingredients

  • 1 cup white vatana, soaked overnight
  • 4 potato patties (tikkis)
  • 2 tbsp tamarind chutney
  • 2 tbsp green chutney
  • 1 tsp chaat masala
  • 1 onion, chopped
  • Sev for topping
  • Fresh coriander

Method

  1. 1

    Cook vatana until soft, mash some for thick consistency (ragda).

    Season ragda with salt, cumin, red chili powder.

  3. 3

    Pan-fry potato tikkis until golden and crispy.

  4. 4

    Place tikkis on plate, pour ragda generously over them.

  5. 5

    Top with tamarind chutney, green chutney, onion and chaat masala.

  6. 6

    Garnish with sev and coriander, serve immediately.
