Perfectly crispy South Indian medu vada with sambar

Ingredients
- 1 cup whole urad dal, soaked 4 hours
- 2 green chilies
- 1/2 inch ginger
- Black peppercorns
- Curry leaves
- Pinch of hing
- Salt to taste
- Oil for deep frying
Method

Grind soaked dal to a very fluffy batter, adding minimal water.

Add crushed pepper, chopped curry leaves, hing and salt.

Whip the batter well for extra fluffiness.

Wet a banana leaf or plastic sheet, shape vadas with a hole.

Fry in hot oil on medium heat until deep golden brown.

Serve immediately with sambar and coconut chutney.
