Ingredients
- 1 cup whole urad dal, soaked 4 hours
- 2 green chilies
- 1 inch ginger
- 8 curry leaves
- 1 onion, chopped fine
- Black pepper
- Salt to taste
- Oil for deep frying
Method

Drain soaked urad dal and grind to a fluffy batter without water.

Add green chilies, ginger, curry leaves, onion and pepper.

Wet hands, shape into donut-shaped vadas with a hole in centre.

Heat oil to medium-high, slide vadas gently into oil.

Fry until golden brown and crispy on both sides.

Drain well and serve with coconut chutney and sambar.
