Ingredients

  • 2 cups rice, cooked
  • 1 tsp turmeric powder
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 2 tbsp cashews
  • Curry leaves
  • 2 green chilies
  • 2 tbsp oil

Method

    Heat oil, add mustard seeds, urad dal and cashews.

    When mustard pops, add curry leaves and green chilies.

    Add turmeric powder and stir briefly.

    Add cooked rice and toss gently to coat evenly.

    Season with salt and a squeeze of lemon.

    Serve as a quick lunch with raita and papad.
