Layered vegetarian biryani with marinated soya chunks

Ingredients

  • 1 cup soya chunks
  • 2 cups basmati rice
  • 1 cup yogurt
  • 2 onions, sliced
  • 1 tbsp biryani masala
  • Saffron in warm milk
  • Mint and coriander
  • 3 tbsp ghee

Method

    Soak soya chunks, squeeze dry and marinate in yogurt and spices.

    Parboil rice with whole spices until 70% done.

    Fry onions golden, set half aside for layering.

  4. 4

    Layer marinated soya and rice in a heavy pot.

    Add saffron milk, fried onions, mint and coriander on top.

    Seal and cook on dum for 25 minutes, serve with raita.
