Classic Punjabi sarson ka saag with makki ki roti

Ingredients
- 1 tsp mustard seeds
- 500g mustard greens
- 200g spinach
- 100g bathua leaves
- 2 tbsp makki atta
- 1 onion, chopped
- 4 garlic cloves
- 2 inch ginger
- 4 tbsp butter
Method

Boil all greens with ginger and garlic until very soft.

Blend coarsely, keeping some texture.

Add makki atta to thicken, cook on low stirring frequently.

Heat butter, add mustard seeds, then pour over saag.

Top with extra butter before serving.

Serve with makki ki roti, white butter and jaggery.
