Traditional raw mango pickle with mustard and fenugreek

Ingredients
- 2 tbsp mustard seeds
- 500g raw mango, cut
- 2 tsp fenugreek seeds
- 2 tsp red chili powder
- 1 tsp turmeric
- 1 cup mustard oil
- Salt to taste
Method

Wash and dry raw mangoes, cut into small pieces with seed.

Coarsely grind mustard and fenugreek seeds.

Mix mango pieces with ground spices, chili, turmeric and salt.

Heat mustard oil until smoking, cool completely.

Pour cooled oil over the mango mixture and mix well.

Store in glass jar in sun for a week, shaking daily. Ready in 7-10 days.
