Traditional Indian mustard seed pickle with seasonal vegetables

Ingredients
- 3 tbsp mustard seeds, coarsely ground
- 2 carrots, cut into sticks
- 1 raw mango, cut
- 4 green chilies
- 1 tsp turmeric
- 4 tbsp mustard oil
- Salt to taste
- Lemon juice
Method

Mix ground mustard seeds with turmeric and salt.

Add carrot sticks, mango pieces and green chilies.

Squeeze lemon juice generously over everything.

Heat mustard oil until smoking, cool slightly and pour over.

Mix well and transfer to a clean glass jar.

Keep in sun for 2-3 days, pickle is ready when tangy.
