Light and nourishing moong dal soup with ginger and lemon

Ingredients
- 1 cup moong dal
- 1 onion, chopped
- 2 garlic cloves
- 1 inch ginger, grated
- 1/2 tsp turmeric
- 1/4 tsp pepper
- Lemon juice
- 1 tbsp butter
Method

Cook moong dal with turmeric and salt until completely soft.

Saute onion, garlic and ginger in butter until fragrant.

Add to the dal and blend until smooth and silky.

Add pepper and adjust salt to taste.

Squeeze fresh lemon juice before serving.

Serve warm as a light starter or healing meal.
