Maharashtrian sprouted moong usal with coconut and spices

Ingredients
- 1 cup moong beans, sprouted
- 1 onion, chopped
- 2 tbsp grated coconut
- 1 tsp mustard seeds
- 1/2 tsp turmeric
- 1 tsp goda masala
- 2 green chilies
- Curry leaves
- 1 tbsp oil
Method

Boil sprouted moong until tender, drain.

Heat oil, add mustard seeds, curry leaves and green chilies.

Add onion and saute until translucent.

Add sprouts, turmeric, goda masala and salt.

Cook for 5-7 minutes, add a splash of water if needed.

Garnish with fresh coconut and coriander, serve with pav.
