Fragrant one-pot moong beans pulao with whole spices

  • 1/2 cup moong beans
  • 1.5 cups basmati rice
  • 1 onion, sliced
  • 1 bay leaf
  • 2 cloves
  • 1 cinnamon stick
  • 1 tsp cumin seeds
  • 2 tbsp ghee
  • Salt to taste

Method

    Soak moong beans and rice separately for 30 minutes.

    Heat ghee, add cumin, bay leaf, cloves and cinnamon.

    Add sliced onion and saute until golden.

    Add drained moong beans and rice, saute for 2 minutes.

    Add water (2:1 ratio) and salt, bring to boil then simmer on low.

    Cook covered for 15 minutes, fluff with fork and serve.
