Quick aromatic fenugreek leaf rice with peanut tempering

Ingredients
- 2 cups cooked rice
- 1 cup methi leaves, chopped
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 tbsp peanuts
- 2 dried red chilies
- 1/2 tsp turmeric
- 2 tbsp oil
Method

Heat oil, add mustard seeds, urad dal, peanuts and dried chilies.

When mustard pops, add chopped methi leaves and turmeric.

Saute methi until wilted and moisture evaporates.

Add cooked rice, salt and toss gently to combine.

Cook for 2-3 minutes on low heat.

Serve with papad, pickle and yogurt.
