Simple Maharashtrian plain dal with steamed rice and ghee

Ingredients

  • 1 cup toor dal
  • 1/2 tsp turmeric
  • Salt to taste
  • 2 cups rice
  • 3 tbsp ghee

Method

    Pressure cook toor dal with turmeric until very soft.

    Mash the dal well and thin it with water to a soupy consistency.

    Season only with salt, no tempering for authentic varan.

    Cook rice separately until fluffy.

  5. 5

    Serve varan over hot rice with a generous pool of ghee.

    Enjoy with papad and lemon pickle on the side.
