Rich Sindhi-style toor dal with tangy tamarind and vegetables

Ingredients
- 1 cup toor dal
- 1 tbsp tamarind paste
- 1 potato, cubed
- 4 okra
- 1 tomato, chopped
- 1 tsp cumin seeds
- 2 dried red chilies
- 1/2 tsp turmeric
- Fresh coriander
Method

Cook toor dal with turmeric until soft.

Fry potato and okra separately until lightly browned.

Add tamarind, tomato and fried vegetables to the dal.

Simmer for 15 minutes until everything is well combined.

Temper with cumin seeds and dried red chilies in hot oil.

Garnish with coriander and serve with steamed rice.
