Rajasthani dal bati with crispy baked wheat balls and churma

Ingredients

  • 1 cup toor dal
  • 1/2 cup chana dal
  • 2 cups wheat flour
  • 1/2 cup semolina
  • 4 tbsp ghee (for bati)
  • Ghee for soaking
  • 1 tsp cumin
  • 2 dried red chilies
  • 1/2 tsp turmeric

Method

    Cook both dals together with turmeric until soft, mash well.

    Temper dal with cumin, garlic and dried chilies in ghee.

    Mix wheat flour, semolina, ghee and salt into stiff dough.

    Shape into round balls, bake at 180C for 25 minutes until golden.

    Break hot bati and soak generously in melted ghee.

    Serve bati dipped in dal with churma on the side.
