Crispy deep-fried kachori stuffed with spiced green peas

Ingredients
- 1 cup green peas, mashed
- 2 cups maida
- 1 tsp fennel seeds
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp amchur
- 2 tbsp oil (for dough)
- Oil for deep frying
Method

Make filling: saute mashed peas with fennel, coriander, chili and amchur.

Make dough with maida, oil, salt and water, rest 20 minutes.

Roll small circles, place peas filling, seal into balls.

Flatten slightly and deep fry on medium heat until golden.

Fry slowly to ensure even cooking inside and out.

Serve hot with tamarind chutney and green chutney.
