Nutritious toor dal cooked with fresh spinach and mild spices

Ingredients
- 1 cup toor dal
- 2 cups spinach, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tsp cumin seeds
- 2 garlic cloves
- 1/2 tsp turmeric
- 1 tsp garam masala
- 2 tbsp ghee
Method

Cook toor dal with turmeric until soft.

Blanch spinach in boiling water, drain and roughly chop.

Heat ghee, add cumin and garlic, saute onion until soft.

Add tomatoes and cook until mushy.

Add dal and spinach, simmer for 10 minutes.

Finish with garam masala and serve with roti or rice.
