Traditional Maharashtrian amti with coconut and kokum

Ingredients
- 1 cup toor dal
- 2 kokum petals
- 2 tbsp grated coconut
- 1 tsp goda masala
- 1/2 tsp turmeric
- 1 tsp jaggery
- 1 tsp mustard seeds
- Curry leaves
- Pinch of hing
Method

Cook toor dal until soft, mash lightly.

Add kokum, jaggery, turmeric and goda masala to dal.

Simmer for 10 minutes until flavours meld.

Grind coconut with a little water and add to dal.

Temper with oil, mustard seeds, curry leaves and hing.

Serve with steamed rice and a wedge of lemon.
