Classic North Indian chana masala with rich spicy gravy

Ingredients
- 1 cup desi chana, soaked overnight
- 2 onions, pureed
- 2 tomatoes, pureed
- 1 tbsp chole masala
- 1 tsp amchur
- 1/2 tsp garam masala
- 1 tbsp ginger-garlic paste
- 2 tbsp oil
- Tea bag for dark colour
Method

Boil chana with tea bag and salt until tender, drain tea bag.

Heat oil, saute onion puree until dark golden.

Add ginger-garlic paste and tomato puree, cook 10 minutes.

Add chole masala and all spices.

Add cooked chana, simmer 15 minutes for thick gravy.

Finish with amchur and serve with bhatura or rice.
