Aromatic homemade biryani masala powder with cloves

Ingredients
- 1 tbsp cloves
- 2 cinnamon sticks
- 6 green cardamom
- 2 black cardamom
- 1 mace
- 1/2 nutmeg
- 1 tbsp cumin seeds
- 1 tbsp fennel seeds
- 1 star anise
Method

Dry roast all spices on very low heat for 3-4 minutes.

Stir constantly, remove when fragrant but not burnt.

Cool completely on a plate.

Grind to a fine powder in batches if needed.

Sieve and store in an airtight glass jar.

Use 1-2 tbsp per biryani batch for authentic flavour.
