Homemade Indo-Chinese schezwan sauce with red chilies

Ingredients

  • 2 tsp chili powder
  • 15 dried red chilies
  • 8 garlic cloves
  • 1 inch ginger
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp tomato ketchup
  • 1 tsp sugar
  • 3 tbsp oil

Method

    Soak dried red chilies in hot water for 30 minutes.

    Grind soaked chilies with garlic and ginger to a paste.

    Heat oil, add the paste and chili powder, cook on low 10 minutes.

    Add soy sauce, vinegar, ketchup, sugar and salt.

    Cook until oil separates and sauce thickens.

    Cool and store in sterilized glass jar for up to a month.
