Rajasthani fiery red meat curry with mathania chilies

Ingredients

  • 500g mutton
  • 2 tsp chili powder
  • 8 dried red chilies
  • 1 cup yogurt
  • 2 onions, sliced
  • 1 tbsp ginger-garlic paste
  • 4 tbsp mustard oil
  • Whole spices (cloves, cardamom, cinnamon)

Method

    Soak dried red chilies and grind to a paste.

    Marinate mutton with yogurt, chili paste and chili powder.

    Heat mustard oil, add whole spices and sliced onions.

    Cook onions golden, add ginger-garlic paste.

    Add marinated mutton, seal pot and cook on low for 1 hour.

    The curry should be fiery red. Serve with bajra roti.
