Kaju Rice
Fragrant ghee rice studded with golden cashews and raisins

Ingredients
- 2 cups basmati rice
- 1/4 cup cashews
- 2 tbsp raisins
- 1 bay leaf
- 2 cloves
- 1 cinnamon stick
- 3 tbsp ghee
- Salt to taste
Method

Wash and soak rice for 20 minutes.

Heat ghee, fry cashews until golden, remove and set aside.

In the same ghee, add whole spices and raisins.

Add drained rice, saute for 2 minutes.

Add water and salt, cook covered on low for 15 minutes.

Fluff with fork, top with fried cashews and serve.
