Classic Indian cashew fudge for festivals and celebrations

Ingredients
- 1 cup cashews
- 3/4 cup sugar
- 1/4 cup water
- 1/2 tsp cardamom
- Ghee for greasing
- Silver leaf (vark)
Method

Grind cashews to a very fine powder without releasing oil.

Make sugar syrup to one-string consistency.

Add cashew powder, stir continuously on low heat.

Add cardamom, cook until dough forms and leaves the sides.

Transfer to greased surface, roll thin when warm.

Apply silver leaf, cool and cut into diamond shapes.
