Crispy besan pakoras with mixed vegetables for rainy days

Ingredients
- 1 cup besan
- 1 onion, sliced
- 1 potato, sliced
- Spinach leaves
- 2 green chilies, chopped
- 1/2 tsp ajwain
- 1/4 tsp baking soda
- Salt and red chili powder
- Oil for deep frying
Method

Mix besan with ajwain, baking soda, chili powder and salt.

Add just enough water for a thick coating batter.

Dip vegetables in batter ensuring they are well coated.

Heat oil until hot, fry pakoras in small batches.

Fry until deep golden and crispy on all sides.

Serve hot with mint chutney and masala chai.
