Fragrant layered vegetable biryani with aromatic spices

Ingredients
- 2 cups basmati rice
- 2 cups mixed vegetables
- 2 onions, sliced
- 1/2 cup yogurt
- 1 tbsp biryani masala
- Saffron in milk
- Mint and coriander
- 3 tbsp ghee
Method

Parboil rice with whole spices until 70% done, drain.

Cook vegetables in gravy with biryani masala and yogurt.

Layer rice and vegetables alternately in a heavy pot.

Add saffron milk, fried onions, mint and coriander on top.

Seal pot tightly and cook on dum for 25 minutes.

Serve with raita, salan and boiled eggs.
