Classic mixed vegetable pulao with whole spices and ghee

Ingredients

  • 2 cups basmati rice
  • 1 cup mixed vegetables
  • 1 onion, sliced
  • 1 bay leaf
  • 4 cloves
  • 2 cinnamon sticks
  • 1 tsp cumin seeds
  • 3 tbsp ghee

Method

    Soak rice for 20 minutes, drain.

    Heat ghee, add whole spices and sliced onion.

  3. 3

    Saute onion golden, add vegetables and stir 2 minutes.

    Add rice, water and salt. Bring to boil.

  5. 5

    Cover tightly and cook on low for 15 minutes.

    Rest 5 minutes, fluff and serve with raita.
