Traditional creamy rice kheer with saffron and cardamom

Ingredients
- 1/4 cup basmati rice
- 1 litre full-cream milk
- 1/2 cup sugar
- 1/4 tsp cardamom powder
- Saffron strands
- Almonds and pistachios
Method

Wash and soak rice for 30 minutes.

Boil milk in a heavy-bottom pan, stirring to prevent sticking.

Add drained rice and cook on low, stirring frequently.

When rice is very soft and milk reduced by half, add sugar.

Add saffron and cardamom, cook 5 more minutes.

Garnish with sliced nuts and serve warm or chilled.
