South Indian tangy lemon rice with peanut and curry leaf tempering

Ingredients
- 2 cups cooked basmati rice
- 3 tbsp lemon juice
- 1/2 tsp turmeric
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 tbsp peanuts
- 2 dried red chilies
- Curry leaves
- 2 tbsp oil
Method

Spread cooked rice on a plate and let it cool slightly.

Heat oil, add mustard seeds, urad dal, peanuts and dried chilies.

When mustard pops, add curry leaves and turmeric.

Add cooled rice and toss gently with the tempering.

Squeeze lemon juice over rice and mix well.

Serve with papad and pickle as a quick meal.
