Traditional Rajasthani bajra roti cooked on open flame

Ingredients
- 2 cups bajra flour
- Warm water
- Salt to taste
- Ghee for serving
Method

Add warm water gradually to bajra flour and knead soft dough.

The dough should be pliable, not sticky or dry.

Pat dough balls between palms into thick round rotis (no rolling pin).

Cook on hot tawa, then hold directly over flame to puff.

Apply generous ghee on both sides while hot.

Serve with dal, gur (jaggery) and white butter.
