Warming Rajasthani bajra porridge with buttermilk and jaggery

Ingredients

  • 3 tbsp bajra flour
  • 1 cup buttermilk
  • 2 cups water
  • 1 tbsp jaggery
  • 1/2 tsp ajwain
  • Pinch of salt
  • 1 tbsp ghee

Method

    Dry roast bajra flour on low heat for 3 minutes until fragrant.

    Add water gradually, stirring to avoid lumps.

    Cook on low heat for 10 minutes until thickened.

    Add buttermilk, jaggery, ajwain and salt.

  5. 5

    Simmer for 5 more minutes.

    Add ghee and serve warm, especially good in winters and for new mothers.
