Steamed Gujarati bajra dumplings with sesame and spices

Ingredients

  • 2 cups bajra flour
  • 1/4 cup yogurt
  • 1 tbsp sesame seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili
  • 1 inch ginger, grated
  • 2 tbsp oil

Method

    Mix bajra flour with yogurt, sesame, cumin, spices and ginger.

    Add warm water and oil to make a firm dough.

    Shape into cylindrical logs about 2 inches thick.

    Steam for 20 minutes until cooked through.

    Slice into rounds and optionally shallow fry with mustard seeds.

    Serve with green chutney and hot chai.
