Melt-in-mouth almond barfi with silver leaf topping

Ingredients
- 1 cup almonds
- 1/2 cup sugar
- 2 tbsp ghee
- 1/4 tsp cardamom
- Saffron strands
- Silver leaf (vark) for decoration
Method

Blanch almonds, peel and grind to a fine powder.

Make sugar syrup to one-string consistency.

Add almond powder and ghee, stir continuously on low heat.

Add cardamom and saffron, cook until mixture thickens.

Spread on greased plate, smooth the top.

Apply silver leaf, let set and cut into diamond shapes.
