Mughlai almond-based vegetable korma with rich cream gravy

Ingredients
- 15 almonds, soaked
- 2 cups mixed vegetables
- 1 onion, sliced
- 1/4 cup cream
- 1 tsp ginger-garlic paste
- 1/2 tsp garam masala
- 2 tbsp ghee
- Saffron strands
Method
- 1
Grind soaked almonds and fried onions to a smooth paste.

Heat ghee, add ginger-garlic paste.

Add almond-onion paste and cook for 10 minutes.

Add boiled vegetables, cream and saffron.

Simmer gently for 10 minutes on low heat.

Finish with garam masala and serve with naan or pilaf.
