Dal Dhansak
Parsi-style mixed dal with vegetables and tangy-sweet flavour

Ingredients
- 1 cup mixed dal blend
- 1 small pumpkin, cubed
- 1 brinjal, cubed
- 1 bunch fenugreek leaves
- 2 onions, sliced
- 1 tbsp dhansak masala
- 1 tbsp jaggery
- 1 tbsp tamarind paste
- 3 tbsp oil
Method

Cook mixed dal with pumpkin, brinjal and fenugreek until soft.

Mash everything together for a thick consistency.

Fry onions until crispy, set half aside for garnish.

Add dhansak masala, jaggery and tamarind to the dal.

Simmer for 20 minutes until thick and flavourful.

Garnish with fried onions and serve with brown rice.
